1. I used the Hue/Saturation Adjustment layer for these three images and used an inverted layer mask and painted in the areas I wanted shown.

2. My favorite adjustment layer to use is either Curves or Brightness/Contrast as I sometimes over/under expose my photos and that tool really helps set a good base for me to build upon.
